Spaghetti with tuna sauce
Spaghetti with tuna sauce is a first course of fish, perfect both in winter and in summer. A simple recipe, the delicate flavors and scent of fresh tuna, will give to this dish a refined taste, perfect for a dinner with friends.
Ingredients for spaghetti with tuna sauce (4 people)
- 0.9 pounds of spaghetti;
- 0.7 pounds of fresh tuna;
- 0.5 pounds of tomato puree;
- 0.10 pounds of red Tropea onion;
- ½ glass of white wine;
- 1 bunch of parsley;
- 1 clove of garlic;
- 4 fresh basil leaves to garnish the dish;
- extra virgin olive oil;
- Salt and black pepper.

Preparation of spaghetti with tuna sauce
Remove the skin of the tuna steak and check if it’s free from fishbones. Let the tuna rest in a bowl with water and salt for about 15 minutes, drain and sprinkle with sea salt.
Cut the tuna steak into not too large cubes.
Cut a very fine mince of red onion. Heat a pan with a drizzle of extra virgin olive oil, the chopped onion and the head of garlic cut in half, letting it heat until lightly fried.
When the onion starts to fry, adjust the temperature and add the tuna, letting it brown in a pan for a few minutes.
Raise the cooking temperature and pour in the ½ glass of white wine, mix by letting the alcohol in the wine evaporate, and then lower the cooking temperature.
Add the tomato puree and chopped fresh parsley, stirring regularly.
Taste it to check the flavor and add salt if necessary. Remove the garlic with kitchen tweezers and let it cook for another 5 minutes.
Put a pot with salted water to heat. Once the water has boiled, add the spaghetti and let them cook for the cooking time indicated on the package.
Let’s try to get it cooked al dente, tasting to check the cooking level. This will allow the cooking time of the spaghetti in the pan with the tuna sauce, without overcooking them.
Drain the spaghetti directly into the pan with the sauce, toss in the pan to mix all the flavors.
We can serve our spaghetti with tuna sauce and garnish with a basil leaf.
